Preheat oven to 200°C (400°F). Chop red bell pepper, zucchini, eggplant, and red onion into 2.5cm (1-inch) pieces. Place vegetables on a baking tray, drizzle with 1 tablespoon olive oil, season with salt and pepper, and toss to coat.
Roast vegetables for 20-25 minutes until tender and slightly caramelized, turning halfway through cooking.
While vegetables roast, prepare romesco sauce: In a food processor or blender, combine roasted red pepper (use ½ of the roasted pepper from tray), tomatoes, garlic, almonds, bread slice, smoked paprika, 1 tablespoon olive oil, and sherry vinegar. Blend until smooth but still slightly textured.
Season cod fillets with salt and pepper. Heat remaining 1 tablespoon olive oil in a non-stick pan over medium heat. Cook fish for 3-4 minutes per side until golden and cooked through.
Arserve roasted vegetables on plates, top with cod fillets, and spoon romesco sauce generously over the fish. Garnish with chopped fresh parsley and lemon wedges.
