Preheat the oven to 180°C (350°F) and lightly grease 4 ramekins or a muffin tin with a little olive oil.
Peel the potatoes and cut them into small cubes (about 1 cm). Finely chop the onion.
Heat 1 tablespoon of olive oil in a non-stick frying pan over medium heat. Add the potatoes and onion, season with a pinch of salt, and cook gently for about 10–12 minutes until the potatoes are soft but not browned.
In a mixing bowl, whisk the eggs. Add the cooked potatoes and onion, the remaining tablespoon of olive oil, salt, and black pepper. Mix gently.
Divide the mixture evenly among the prepared ramekins or muffin cups.
Bake for 15–18 minutes, or until the tortillas are set around the edges and golden on top.
Allow to cool for 5 minutes in the tins, then carefully remove. Serve warm or at room temperature.
