Preheat the oven to 425°F (220°C).
Wash and dice the sweet potatoes, then toss them with olive oil and a pinch of salt. Spread them on a baking sheet.
Bake the sweet potatoes in the oven for about 25-30 minutes, or until tender and slightly caramelized.
While the sweet potatoes are baking, season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add a tablespoon of olive oil.
Cook the chicken breasts for 6-7 minutes per side, or until cooked through. Remove from heat and let rest.
In a small bowl, mix tahini with a bit of water and a pinch of salt until smooth.
Slice the ginger thinly.
To assemble the poke bowl, place a bed of baked sweet potatoes, sliced chicken, and ginger on top. Drizzle with tahini sauce.
