Toss sweet potato cubes with 1 tablespoon olive oil, paprika powder, salt, and black pepper. Spread evenly on a baking sheet.
Roast sweet potatoes for 25-30 minutes until crispy and golden brown, turning halfway through.
While potatoes roast, finely chop the onion and garlic. Heat remaining olive oil in a saucepan over medium heat.
Sauté onion and garlic until softened, about 3-4 minutes. Add chopped tomatoes and cook for 10-12 minutes until saucy.
Season tomato sauce with salt and pepper to taste. Blend with an immersion blender for smoother texture if desired.
Arrange crispy sweet potatoes on serving plates, top with tomato sauce, and garnish with fresh parsley.
