Instructions

Bring a large pot of salted water to a boil. Add the lentil pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.

While the pasta cooks, peel and finely grate the ginger. Mince the garlic cloves.

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and grated ginger, sauté for 1-2 minutes until fragrant but not browned.

Add the drained pasta to the skillet along with the reserved pasta water. Toss to combine and cook for 1-2 minutes to let the flavors meld.
