Rinse the adzuki beans and soak them overnight. Cook in boiling water until tender, about 45 minutes.
While beans are cooking, prepare the artichokes by trimming the tops and removing the outer leaves.
Steam the artichokes for 25-30 minutes until tender.
In a bowl, combine cooked adzuki beans, chopped mint, olive oil, lemon juice, minced garlic, salt, and black pepper.
Once the artichokes are cooked, carefully scoop out the centers and fill them with the adzuki bean mixture.
