Instructions

Rinse the wild rice under cold water. In a saucepan, bring the water and wild rice to a boil, then reduce the heat, cover, and simmer for 45-50 minutes until the rice is tender and the grains have split. Drain any excess liquid and set aside.

While the rice cooks, press the tofu to remove excess moisture, then cut it into 2 cm cubes. Pat dry with a clean towel.

Heat 1 tablespoon of sesame oil in a large wok or skillet over medium-high heat. Add the tofu cubes and fry for 6-8 minutes, turning occasionally, until golden and slightly crisp on all sides. Transfer the tofu to a plate.

Add the remaining tablespoon of sesame oil to the wok. Add the sliced spring onions (reserving some green tops for garnish), minced garlic, and grated ginger. Stir-fry for 30 seconds until fragrant.

Add the sliced carrot and broccoli florets and stir-fry for 3-4 minutes until just tender but still crisp.

Return the tofu to the wok, pour in the soy sauce, and toss to combine. Cook for 1-2 minutes to heat through.

Add the cooked wild rice and kimchi, and stir-fry for another 2-3 minutes until everything is well mixed and heated through.

Taste and adjust seasoning if needed. Serve hot, garnished with the reserved spring onion greens and a sprinkle of sesame seeds.
