Instructions

1

Press the tofu block for 10 minutes to remove excess water, then cut it into 2 cm cubes.

2

Thinly slice the carrot, cucumber, radish, and red onion. Place them in a bowl and toss with the apple vinegar and a pinch of salt. Set aside to pickle for at least 15 minutes.

3

Cook the noodles according to the package instructions, then drain and rinse briefly under cold water.

4

Heat the sunflower oil in a frying pan over medium-high heat. Add the tofu cubes and fry until golden and crisp on all sides.

5

Add the minced garlic and grated ginger to the pan and stir-fry for 1 minute until fragrant.

6

Stir in the soy sauce and sesame oil, tossing the tofu to coat evenly, then remove from the heat.

7

Divide the noodles between two bowls. Top with the crispy tofu and the pickled vegetables.

8

Pour the kefir over each bowl, then finish with sliced spring onion and a sprinkle of sesame seeds. Serve immediately.

FAQ

How many servings does this tofu and kefir noodle bowl make?
The recipe makes two servings.
How long should the vegetables pickle?
Let the sliced vegetables pickle in apple vinegar and salt for at least 15 minutes. A longer time will give them a stronger flavor.
Can I prepare the tofu in advance?
Yes. Cooked tofu can be prepared ahead and refrigerated. Reheat it in a pan or oven to help retain its crispness.
Can I make this recipe vegan?
Yes. Replace dairy kefir with an unsweetened, plant-based kefir alternative.
Is this noodle bowl gluten-free?
Only if you use gluten-free noodles and gluten-free soy sauce or tamari. Check the product labels.
What can I use instead of kefir?
Unsweetened yogurt thinned with a little water, or a plant-based kefir alternative, can provide a similar creamy, tangy element.
How can I make the tofu crispier?
Press it well, pat it dry, use a hot pan, and avoid overcrowding the tofu cubes. Cook until golden on several sides.
Can I store leftovers?
Store the noodles, tofu, pickled vegetables, and kefir separately in sealed containers in the refrigerator. For best texture, eat them within one to two days.
