Rinse the leeks thoroughly under cold water to remove any dirt or grit.
Place the leeks in a baking dish and drizzle with olive oil, salt, and black pepper.
Season the chicken breasts with mustard, salt, and pepper, then place them on top of the leeks.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the leeks are tender.
