Cut the chicken breast into bite-sized pieces. Dice the bell pepper, red onion, and tomatoes. Mince the garlic.
Heat olive oil in a large pan or paella pan over medium heat. Add the chicken pieces and cook until lightly browned, about 5-6 minutes. Remove from pan and set aside.
In the same pan, add a little more oil if needed. Sauté the red onion and bell pepper until softened, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.
Stir in the brown rice, paprika powder, and turmeric. Cook for 1-2 minutes until the rice is well coated with the spices and oil.
Pour in the chicken broth and bring to a simmer. Add the cooked chicken back to the pan. Reduce heat to low, cover, and let cook for 15-20 minutes until rice is tender and liquid is absorbed.
Add the diced tomatoes and green peas to the pan. Cover and cook for another 5 minutes until vegetables are heated through but still vibrant.
Season with salt and black pepper. Stir in chopped parsley. Remove from heat and let rest for 5 minutes before serving.
