Ingredients
Instructions
Finely chop the onion and garlic. In a mixing bowl, combine beef mince, chopped onion, garlic, egg, breadcrumbs, salt, and pepper. Mix well until evenly combined.
Form the beef mixture into small meatballs (albondigas), about 2-3 cm in diameter.
Heat olive oil in a frying pan over medium heat. Cook the meatballs for 8-10 minutes, turning occasionally, until browned and cooked through.
While the meatballs cook, prepare the salad. Chop the cucumber, bell pepper, and halve the cherry tomatoes. Combine with mixed salad greens in a large bowl.
Whisk together olive oil, lemon juice, and chopped parsley to make a simple dressing. Toss the salad with the dressing.
Serve the cooked albondigas alongside the fresh salad. Garnish with additional parsley if desired.
