Pat the gilthead sea bream fillets dry with paper towels and season both sides with sea salt and black pepper.
Finely chop the fresh parsley and thyme. Mince the garlic cloves. Zest the lemon and then cut it into wedges.
In a small bowl, mix the chopped herbs, minced garlic, and lemon zest with 1 tablespoon of olive oil to create a herb paste.
Brush the remaining tablespoon of olive oil over the fish fillets, then spread the herb paste evenly over the top of each fillet.
Preheat a grill or grill pan over medium-high heat. Once hot, place the fish fillets herb-side up on the grill. Cook for 4-5 minutes until the underside is nicely marked and cooked through.
While the fish is cooking, prepare the asparagus by trimming the woody ends. Toss with a little olive oil, salt, and pepper.
Carefully flip the fish fillets and cook for an additional 2-3 minutes until the fish is cooked through and flakes easily with a fork.
Grill the asparagus alongside the fish for 5-7 minutes until tender and lightly charred, turning occasionally.
Serve the grilled dorada immediately with the grilled asparagus and lemon wedges on the side for squeezing over the fish.
