Trim the artichokes: Cut off the top third and trim the stem. Remove any tough outer leaves.
Steam or boil the artichokes for 15-20 minutes until tender but still firm. Let them cool.
Cut each artichoke in half lengthwise and scoop out the fuzzy choke with a spoon.
In a bowl, whisk together olive oil, juice from half the lemon, minced garlic, salt, and black pepper.
Brush the artichoke halves generously with the marinade, making sure to get between the leaves.
Preheat grill to medium-high heat. Grill artichokes cut-side down for 4-5 minutes until lightly charred.
Flip and grill for another 3-4 minutes until tender and grill marks appear.
Transfer to a serving plate, sprinkle with chopped parsley and zest from remaining lemon half.
Serve warm with lemon wedges from the remaining lemon half.
