Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
Wash and peel the carrots, then cut them into even sticks. Spread them on the baking tray, drizzle with half of the olive oil, season with a pinch of salt and black pepper, and toss to coat.
Roast the carrots in the oven for about 20-25 minutes, turning once, until tender and lightly caramelized.
Meanwhile, rinse the brown rice and cook it according to package instructions until fluffy and tender.
Pat the cod pieces dry, season lightly with salt and black pepper, and brush with the remaining olive oil.
When the carrots are almost done, place the cod on the tray or a separate lined tray and bake for 10-12 minutes, until the fish is opaque and flakes easily with a fork.
Warm the spinach briefly in a pan or steam it until just wilted.
Divide the cooked brown rice between two bowls, then top with the roasted carrots, flaked cod, and wilted spinach.
