Prepare the vegetables: dice the bell pepper and zucchini into 1-inch pieces, thinly slice the red onion, and halve the cherry tomatoes.
Mince the garlic cloves finely and chop the fresh parsley.
Heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes, sauté for 1 minute until fragrant.
Add the diced bell pepper, zucchini, and sliced red onion to the skillet. Cook for 5-6 minutes until vegetables begin to soften.
Add the halved cherry tomatoes and cook for another 2-3 minutes until they start to release their juices.
Season the vegetables with salt, black pepper, and fresh oregano. Stir to combine.
Add the shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
Remove from heat and stir in the fresh parsley and lemon juice.
