In a medium bowl, combine chia seeds, coconut milk, honey, vanilla extract, and the juice from half a lemon. Whisk well to combine.
Cover the bowl and refrigerate for at least 4 hours or overnight, stirring once after 30 minutes to prevent clumping.
While the chia pudding sets, peel the orange and remove all white pith. Segment the orange by cutting between the membranes.
Using a zester or fine grater, zest about 1 teaspoon of orange zest from the remaining orange peel.
After the pudding has thickened, give it a final stir. Divide between 2 serving bowls or glasses.
Top each serving with orange segments and sprinkle with orange zest. Serve chilled.
