Steam or boil the artichokes for 25-30 minutes until the base is tender when pierced with a knife. Drain and let cool slightly.
In a bowl, mix cooked adzuki beans, minced garlic, 1 tablespoon olive oil, salt, and black pepper. Spoon the mixture into the center of each artichoke.
In a small bowl, whisk together tahini, lemon juice, 1 tablespoon olive oil, fresh thyme, and 2 tablespoons water until smooth. Adjust consistency with more water if needed.
Place stuffed artichokes on a baking sheet, drizzle with remaining olive oil, and bake for 15 minutes until lightly golden.
Remove from oven, let rest for 5 minutes, then drizzle generously with thyme tahini sauce before serving.
