Rinse adzuki beans and soak overnight or for at least 4 hours. Drain and set aside.
Chop onion and mince garlic. Heat olive oil in a large pot over medium heat. Sauté onion until translucent, then add garlic and cook for 1 minute.
Add tomato paste and stir for 2 minutes until fragrant. Add soaked adzuki beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
Add chopped artichoke hearts and simmer for another 15 minutes until beans are tender.
Stir in chopped fresh coriander, salt, and black pepper. Simmer for 5 more minutes. Adjust seasoning to taste.
Serve hot, optionally with a side of greens or whole grain bread.
