Preheat the oven to 200°C (400°F). Cut the zucchinis in half lengthwise and scoop out the center with a spoon to create boats, leaving about 0.5 cm border. Reserve the scooped zucchini flesh.
Dice the chicken breast, onions, bell peppers, and reserved zucchini flesh into small pieces. Mince the garlic cloves.
Heat 1 tablespoon olive oil in a pan over medium heat. Add the diced onion and sauté for 3 minutes until translucent. Add garlic and cook for another minute.
Add the diced chicken to the pan and cook until no longer pink, about 5-7 minutes. Then add the diced bell peppers and reserved zucchini flesh. Cook for another 5 minutes until vegetables are softened.
Season the chicken mixture with oregano, salt, and black pepper. Stir in half of the fresh basil (chopped). Remove from heat.
Place the zucchini boats on a baking tray lined with parchment paper. Brush the inside with remaining olive oil. Fill each boat generously with the chicken and pepper mixture.
Sprinkle grated parmesan cheese over the filled zucchini boats. Bake in the preheated oven for 20-25 minutes, until zucchini is tender and cheese is golden brown.
Garnish with remaining fresh basil leaves before serving. Serve warm as a complete meal.
