Scoop out the seeds and pulp from the tomatoes, creating a hollow space for the eggs.
Place tomatoes in a baking dish, drizzle with olive oil, and season with salt and pepper.
Bake tomatoes for 10 minutes until slightly softened.
Crack one egg into each tomato cavity. Season with additional salt and pepper.
Return to oven and bake for 12-15 minutes until egg whites are set but yolks are still runny.
Garnish with fresh herbs and serve immediately.
