Preheat oven to 200°C (400°F). Clean the mushrooms and remove stems, setting the caps aside.
Finely chop the mushroom stems, onion, and garlic. Heat 1 tablespoon olive oil in a pan and sauté the chopped vegetables until softened.
Add spinach to the pan and cook until wilted. Remove from heat and let cool slightly.
In a bowl, combine the sautéed vegetable mixture with breadcrumbs, parmesan cheese, parsley, salt, and pepper.
Brush the mushroom caps with the remaining olive oil and arrange on a baking sheet.
Spoon the stuffing mixture into each mushroom cap, pressing gently to fill.
Bake for 15-20 minutes until mushrooms are tender and stuffing is golden brown.
Serve warm as an appetizer or side dish.
