Preheat the oven to 400°F (200°C).
Wrap the whole garlic in aluminum foil and roast in the oven for 30-40 minutes until soft.
In a large pot, heat the olive oil over medium heat and sauté diced onions, carrots, and celery until softened.
Add the thyme, salt, and pepper, then stir for another minute.
Once garlic is cool, squeeze the roasted garlic cloves into the pot and mash them with a fork.
Add the white beans and vegetable broth to the pot, and bring to a simmer.
Cook for 15-20 minutes to allow the flavors to meld.
Adjust seasoning to taste and serve warm.
