Preheat your oven to 190°C (375°F).
In a saucepan, bring the vegetable broth to a boil and add the pearl barley. Reduce the heat and simmer for about 30 minutes until tender.
While the barley is cooking, clean and slice the mushrooms. Dice the onion and mince the garlic.
In a skillet, heat the olive oil over medium heat. Sauté the onion and garlic until translucent, then add the sliced mushrooms and cook until they are browned.
Once the barley is cooked, drain any excess liquid and combine it with the mushroom mixture in the skillet. Season with salt, black pepper, and chopped parsley.
Transfer the mixture to a baking dish and spread it evenly. Bake in the preheated oven for about 15 minutes.
Remove from the oven and let it cool slightly before serving.
