Pat the cod fillets dry and cut into bite-sized pieces. Peel and devein the prawns if needed.
Heat olive oil in a large paella pan or wide skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add minced garlic, diced bell pepper, and paprika. Cook for another 3-4 minutes until fragrant.
Add the grated tomato and cook for 2-3 minutes until it breaks down and forms a sauce.
Break the vermicelli noodles into shorter lengths if desired. Add them to the pan and toast lightly for 1-2 minutes, stirring constantly.
Pour in the vegetable broth and add saffron threads. Bring to a simmer and cook for 5 minutes until noodles begin to soften.
Arrange the cod pieces and prawns evenly over the noodles. Reduce heat to low, cover, and cook for 8-10 minutes until seafood is cooked through and noodles are tender.
Remove from heat and let rest, covered, for 5 minutes. Serve with lemon wedges on the side.
