Preheat the oven to 180°C (350°F).
Cut the courgettes in half lengthwise and scoop out the center using a spoon.
In a pot, heat olive oil over medium heat and sauté chopped onions and minced garlic until soft.
Add lentils, diced tomatoes, tomato paste, salt, pepper, and oregano. Stir and cook for about 10 minutes until lentils are soft.
Fill the courgette halves with the lentil and tomato mixture.
