Pat the fish fillets dry and cut into chunks. Place in a food processor and pulse until finely minced.
In a mixing bowl, combine the minced fish, breadcrumbs, egg, lemon juice, salt, and black pepper. Mix well until the mixture comes together.
Form the fish mixture into small meatballs (albondigas), about 1 inch in diameter.
Heat olive oil in a skillet over medium heat. Cook the fish albondigas for 3-4 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
For the parsley sauce, finely chop the fresh parsley leaves and garlic. In a small saucepan, combine parsley, garlic, and vegetable broth. Simmer for 2-3 minutes.
Serve the fish albondigas with the warm parsley sauce drizzled over the top.
Garnish with additional fresh parsley if desired and serve immediately.
