Clean the mussels thoroughly under cold running water, removing any beards and discarding any open ones that don't close when tapped.
Dice the onion, mince the garlic, and chop the tomatoes into small pieces.
Heat olive oil in a large, shallow pan over medium heat. Add onion and garlic, sauté until softened and fragrant, about 3-4 minutes.
Add the chopped tomatoes, tomato paste, paprika, and saffron to the pan. Cook for another 2-3 minutes until the tomatoes begin to break down.
Add the fideuà noodles to the pan and stir to coat them with the tomato mixture for about 1 minute.
Pour in the seafood broth, season with salt and pepper, and bring to a simmer. Cook for 5 minutes, stirring occasionally.
Add the cleaned mussels to the pan, arranging them evenly over the noodles. Cover and cook for 4-5 minutes until mussels open.
Discard any mussels that haven't opened. Remove from heat and let rest for 2 minutes.
Garnish with fresh parsley before serving. Serve directly from the pan while hot.
