Preheat oven to 200°C (400°F). Wash and scrub the potatoes, then cut them into wedges or cubes.
Trim the ends off the green beans and wash them thoroughly.
Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.
In a large baking dish or sheet pan, toss the potatoes with 1 tablespoon of olive oil, minced garlic, and rosemary. Spread them in a single layer.
Place the seasoned chicken breasts in the center of the baking dish and arrange the green beans around them. Drizzle the remaining olive oil over the green beans.
Roast in the preheated oven for 25-30 minutes, or until chicken is cooked through (internal temperature 75°C/165°F) and potatoes are golden and tender.
Remove from oven and let the chicken rest for 5 minutes before serving. Check seasoning and add additional salt or pepper if desired.
