Finely chop the onion and garlic cloves.
In a large bowl, combine beef mince with half of the chopped onion, half of the parsley, salt, and pepper. Mix well and form into small meatballs (albondigas).
Heat olive oil in a large pot over medium heat. Add the remaining onion and garlic, sauté until softened (about 3-4 minutes).
Add chopped tomatoes to the pot and cook for 5 minutes until they start to break down.
Pour in beef broth and bring to a simmer. Carefully add the meatballs to the simmering liquid.
Add drained white beans to the pot. Cover and simmer gently for 20-25 minutes until meatballs are cooked through.
Stir in remaining fresh parsley. Adjust seasoning with salt and pepper to taste.
Serve hot, optionally with whole grain bread or a light side salad.
