Rinse adzuki beans and soak them overnight or for at least 4 hours in water.
Drain and rinse the soaked beans. In a large pot, heat olive oil over medium heat and sauté chopped onion and minced garlic until fragrant.
Add the soaked adzuki beans and vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes.
Trim the ends of the asparagus and cut into 2-inch pieces. Add to the pot and cook for 10 minutes or until tender.
Stir in fresh tarragon, salt, and black pepper. Simmer for 5 more minutes. Taste and adjust seasoning if needed.
Serve warm, optionally garnished with extra tarragon leaves.
