    How glycemic index works

    GI compares a food’s blood-sugar rise to a reference (glucose or white bread). Researchers track blood glucose over time after eating a standard portion of the same amount of available carbohydrate.

    The faster the food is digested and absorbed, the higher the GI. This is influenced by how refined the carbohydrate is, its fiber content, and how the food is prepared (for example, longer cooking can change starch structure).

    Microbiome connection: gut bacteria ferment some carbohydrates, producing short-chain fatty acids. These can affect gut barrier function and how quickly glucose appears in the bloodstream, shifting your real-world glucose curve compared with the food’s labeled GI.

    Why glycemic index matters for your health

    GI helps you choose carbs that may support steadier energy. Lower-GI foods often cause a slower glucose rise, which can reduce post-meal “crashes” for some people.
