Instructions

Rinse the adzuki beans and soak them overnight or for at least 6 hours. Drain and rinse again before cooking.

Chop the onion and mince the garlic. Heat olive oil in a large pot over medium heat and sauté the onion and garlic until soft and fragrant.

Add the soaked adzuki beans and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes or until beans are tender.

While beans cook, quarter the artichokes and remove the choke. Add them to the pot after 30 minutes of simmering.

Stir in the za'atar spice blend, lemon juice, salt, and black pepper. Simmer for another 10 minutes to allow flavors to meld.
