Rinse the rice under cold water until the water runs clear. Set aside to drain.
Heat olive oil in a large pan over medium heat. Add chopped onion and garlic, sauté until softened and fragrant, about 3-4 minutes.
Add diced bell pepper and cook for another 2 minutes until slightly softened.
Stir in the rice and paprika powder, coating the rice with the oil and vegetables for 1 minute.
Pour in the vegetable broth and add diced tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is cooked and liquid is absorbed.
While rice is cooking, pat the cod fillets dry and season with salt and pepper.
In a separate pan, heat a tablespoon of olive oil over medium heat. Cook the cod fillets for 3-4 minutes per side until cooked through and flaky.
Fluff the cooked rice with a fork and gently fold in the cooked cod pieces.
Garnish with fresh chopped parsley and serve immediately.
