Ingredients
Instructions
Clean the mussels thoroughly under cold running water, removing any beards and discarding any open mussels that don't close when tapped.
Dice the tomatoes and finely chop the garlic and fresh herbs.
Heat olive oil in a large pot over medium heat. Add garlic and sauté for 1 minute until fragrant.
Add the diced tomatoes and cook for 3-4 minutes until they begin to break down.
Pour in the white wine and bring to a simmer. Add the cleaned mussels to the pot.
Cover the pot and cook for 5-7 minutes, shaking occasionally, until all mussels have opened.
Discard any mussels that haven't opened. Stir in the fresh herbs and season with salt and pepper.
Serve immediately with crusty bread to soak up the flavorful broth.
