Ingredients
Instructions
Cook lentils according to package instructions until tender, then drain and set aside to cool.
Finely chop the onion and garlic. Heat 1 tablespoon olive oil in a pan and sauté onion and garlic until softened.
In a bowl, combine cooked lentils, sautéed onion and garlic, breadcrumbs, egg, salt, and pepper. Mix well to form a firm mixture.
Shape the lentil mixture into small meatballs (albondigas) about 2-3 cm in diameter.
Heat remaining olive oil in a pan and lightly brown the lentil albondigas on all sides. Remove from pan and set aside.
For the tomato sauce, dice the tomatoes and cook in the same pan until they break down into a sauce. Add chopped basil and season with salt and pepper.
Return the lentil albondigas to the pan with the tomato sauce. Simmer gently for 10-15 minutes until heated through.
Serve warm, garnished with fresh basil leaves if desired.
