Wash and cut the sweet potatoes into fries.
In a mixing bowl, toss the sweet potato fries with olive oil, salt, and ground black pepper.
Spread the fries on a baking sheet and bake for 25-30 minutes until crispy.
While the fries are baking, chop the cherry tomatoes, scallions, and slice the cheese.
Once the fries are done, remove them from the oven and top with cheese, cherry tomatoes, scallions, and black olives.
Return to the oven for an additional 5 minutes until the cheese is melted.
