Peel and chop the celeriac and apple into small cubes.
Dice the onion.
In a large pot, heat olive oil over medium heat and sauté the onion until translucent.
Add the celeriac and apple cubes to the pot, stirring for about 5 minutes.
Pour in the vegetable broth and season with salt, black pepper, and thyme.
Bring to a boil, then lower the heat and let it simmer for 20 minutes or until the celeriac is tender.
Use an immersion blender to puree the soup until smooth.
Stir in the lemon juice before serving.
