Cut tofu into 2cm cubes and pat dry with paper towels.
Chop broccoli into florets, slice carrot diagonally, and cut red bell pepper into strips.
In a large bowl, toss tofu, broccoli, carrot, and bell pepper with olive oil, minced garlic, grated ginger, soy sauce, salt, and black pepper until evenly coated.
Spread the mixture evenly on a baking tray lined with parchment paper.
Roast in the preheated oven for 25-30 minutes, flipping halfway through, until vegetables are tender and tofu is golden.
Serve immediately as a complete plant-forward meal.
