Preheat oven to 200°C (400°F). Cut eggplant into 1-inch cubes and place in a colander. Sprinkle with salt and let sit for 15 minutes to draw out excess moisture.
While eggplant is resting, dice bell pepper, zucchini, onion, and tomatoes into similar-sized pieces. Mince garlic cloves.
Rinse eggplant cubes and pat dry with paper towels. Heat olive oil in a large oven-safe skillet over medium heat.
Add eggplant cubes to the skillet and cook for 5-7 minutes until slightly softened and golden brown. Remove eggplant and set aside.
In the same skillet, add diced vegetables and garlic. Sauté for 5 minutes until vegetables begin to soften.
Return eggplant to the skillet. Add tuna, oregano, salt, and black pepper. Gently mix everything together.
Transfer skillet to the preheated oven and bake for 20-25 minutes until vegetables are tender and flavors have melded together.
Remove from oven and let rest for 5 minutes before serving. Garnish with fresh herbs if desired.
