Instructions

Rinse adzuki beans and soak them in water for at least 2 hours or overnight.

Drain soaked beans and place them in a pot with 500ml vegetable broth. Bring to a boil, then reduce heat and simmer for 45 minutes until tender.

While beans cook, trim and chop asparagus into 2cm pieces. Mince garlic cloves.

Add chopped asparagus and minced garlic to the pot with beans. Simmer for another 15 minutes until asparagus is tender.

Season soup with salt and black pepper to taste. Stir in chopped fresh chives just before serving.
